Riverside Food Lab’s new restaurant, Soho Ramen, will feature special noodle

A “secret recipe” for a ramen noodle formed after tasting and comparing noodles across Asia is the latest addition to the Riverside Food Lab, a multi-restaurant food hall next to Riverside’s Fox Performing Arts Center.
Soho Ramen will be the first ramen restaurant for Dwayne Ciang and his aunt, Erin Kanggara, but they have worked at other Japanese restaurants.
Kanggara tried ramen in Hong Kong, Vietnam, Japan, Korea, Singapore, Indonesia, and China before coming up with this recipe based on the traditional Japanese noodle but with a flavor unique to the restaurant, according to a news release.
The announcement leaves three spots open at the Riverside Food Lab, which is expected to open in early 2018. The lab at 3605 Market Street will feature 14 restaurants and bars.
